Caramel Corn

Ingredients
  

  • 6 ounces Hy-Vee Corn Puffs
  • 1 cup brown sugar firmly packed
  • ½ cup light corn syrup
  • ½ cup unsalted butter
  • ½ tsp vanilla
  • ½ tsp baking soda

Instructions
 

  • In large roasting pan, greased with Pam cooking spray, place corn puffs inside and put into a 250-degree oven while preparing glaze.
  • In heavy 2-quart saucepan, stir brown sugar, corn syrup, and butter. Stirring constantly, bring to a boil over medium heat. Without stirring, boil 3-4 minutes.
  • Remove from heat; stir in vanilla and baking soda until blended.
  • Pour over warm corn puffs; stir to coat well.
  • Bake in 250 degree oven for 45 minutes, stirring every 15 minutes to coat evenly.
  • Cool on waxed paper; break apart. Store in tightly covered container.

Notes

Corn pops can be found in the chip aisle.  Don't use the cereal by the same name.
