Cinnamon / Flavored Caramel Corn

Candy coated corn pops (or popcorn) flavored with cinnamon or other flavoring

Ingredients
  

  • 6 ounces butter flavored corn puffs or 12 cups plain popped corn
  • ½ cup unsalted butter
  • ½ cup light corn syrup
  • 1 cup granulated sugar
  • ½ teaspoon super-strength cinnamon flavoring or 1-2 tsp of other flavoring
  • ½ teaspoon baking soda
  • red food coloring or other color as desired

Instructions
 

  • Preheat oven to 250°F. Place corn puffs in a large roasting pan.
  • In a saucepan, melt butter over medium heat. Stir in corn syrup, sugar, and food coloring (to the desired color).
  • Increase heat to medium-high and bring mixture to a boil without stirring. Continue to cook without stirring 3-4 minutes until mixture reaches 240°F. Remove pan from heat.
  • Using a metal spoon, stir in the flavoring and baking soda.
  • Pour over corn puffs and stir to coat. Bake for 45 minutes, stirring every 15 minutes until corn is crunchy. Remove from oven and spread on parchment paper or wax paper covered surface. Cool completely. Store in airtight containers.

Notes

If using unsalted popcorn, then add 1/2 teaspoon of salt to the sugar mixture before cooking.
 
Other flavors can be used — just adjust the amount of flavoring based on its strength — usually 1 to 2 teaspoons depending on strength of the flavor.  Cinnamon oil is very strong and requires less than a candy or fruit-flavored extract.
