Cinnamon-Roasted Almonds

Ingredients
  

  • 2 egg whites
  • 2 tsp cold water
  • 4 cups whole almonds
  • 1 cup white sugar
  • ½ cup brown sugar
  • 1 tsp salt
  • 2 tsp ground cinnamon
  • 1 tsp almond extract
  • 2 tsp vanilla

Instructions
 

  • Preheat oven to 250 degrees F (120 degrees C). Lightly grease a 10x15 inch jellyroll pan.
  • Lightly beat the egg white. In small pan combine water and sugar. Cook until sugar is almost completely dissolved. Add the cinnamon, salt, almond extract and vanilla. Add the nuts, to the egg whites, then add the sugar mixture. Toss to coat, and spread evenly on the prepared pan.
  • Bake for 1 hour in the preheated oven, stirring occasionally, until golden. Allow to cool, then store nuts in airtight containers.
