Cotton Candy Popcorn

Ingredients
  

  • 6 ounces butter flavored corn pops or 12 cups plain popped corn
  • ½ cup unsalted butter
  • ½ cup light corn syrup
  • 1 cup cotton candy sugar such as Gold Medal Flossugar
  • ½ teaspoon super-strength cinnamon flavoring or 1-2 tsp of other flavoring
  • ½ Teaspoon Baking soda

Instructions
 

  • Preheat oven to 250°F. Place corn pops or popcorn in a large roasting pan lightly coated with non-stick cooking spray.
  • In a saucepan, melt butter over medium heat. Stir in corn syrup, and sugar.
  • Increase heat to medium-high and bring mixture to a boil without stirring. Continue to cook without stirring 3-4 minutes until mixture reaches 240°F. Remove pan from heat.
  • Using a metal spoon, stir in the baking soda.
  • Pour over corn pops (popcorn) and stir to coat. Bake for 45 minutes, stirring every 15 minutes until corn is crunchy. Remove from oven and spread on parchment paper or wax paper covered surface. Cool completely. Store in airtight containers.

Notes

If using unsalted popcorn, then add 1/2 teaspoon of salt to the sugar mixture before cooking.
