Lemon-Poppyseed Pound Cake
Ingredients
- 2 Tbs lemon peel finely grated
- 1 Tbs pure lemon extract
- 3 cups all-purpose flour unsifted
- ¾ tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 cup unsalted butter softened to room temperature
- 2 cups granulated sugar
- 3 jumbo eggs at room temperature
- 2 jumbo egg yolks at room temperature
- 1 cup buttermilk at room temperature
- ¼ cup poppy seeds
Lemon-Sugar Glaze
- ⅓ cup freshly squeezed lemon juice
- ⅓ cup granulated sugar
Instructions
- Lightly butter and flour a 10-inch fluted bundt pan; set aside.
- Mix together the lemon peel and extract in a small bowl; set aside.
- Sift together the flour, baking soda, baking powder and salt onto a large sheet of waxed paper. Sift the flour mixture again.
- Cream the butter in the large bowl of an electric mixer on moderately high speed for 3 minutes. Add the sugar in 3 additions, beating thoroughly after each portion is added.
- Beat in eggs, one at a time, blending well after each one; beat in the egg yolks. Scrape down the sides of mixing bowl.
- With the mixer on low speed, alternately add the sifted flour mixture in 3 additions and the buttermilk in 2 additions, beginning and ending with flour.
- Scrape down the sides of the bowl frequently as the ingredients are added to keep the batter even-textured. With the mixer on low speed, blend in the lemon-peel extract mixture and the poppy seeds. Pour and scrape the batter into the prepared pan. Shake the pan gently from side to side to level the top of the batter.
- Bake the cake on the lower-third level rack of a preheated 350° oven for 60-70 minutes, or until the top of the cake is golden and a wooden toothpick inserted into the center of the cake comes out clean and dry. The cake will pull away slightly from the sides of the pan when done.
- Let cool in the pan on a wire rack for 5 minutes. While the cake is cooling, make the glaze. Invert the cake onto a second cooling rack. Spoon the glaze over the top and sides of the cake. Let cool completely.
Lemon-Sugar Glaze
- Combine juice and sugar in small bowl. Stir until glaze-like.
