This recipe came from Mary Kostos’ mother from when she used to help feed the homeless in Chicago. The name came from an era when we weren’t so politically correct!
New Year's Day Hobo Stew
Ingredients
- 2 pounds beef cubed into bite-size chunks
- 1 onions diced
- ½ celery stalk sliced
- 6 carrots sliced
- ¾ pounds potatoes diced
- 2 tsp salt
- ½ tsp pepper
- 2 tablespoons sugar
- ¾ tsp Kitchen Bouquet
- 2 tablespoons tapioca
- ¾ cup tomato juice
Instructions
- Combine meat and vegetables in oven-safe roaster pan or dutch oven (large enough for all the ingredients). Add salt, pepper, and sugar.
- Mix Kitchen Bouquet and tapioca with tomato juice. Pour over meat mixture. Cover tightly.
- Bake for 5-8 hours at 250 degrees. Meat will be very tender.
Notes
Using marbled beef instead of lean beef results in more juice - and a better stew. The cut of the beef doesn't matter (roast, steaks, etc.) If there are large veins of thick fat, cut that out and discard, as well as any cartilage.
For large gatherings, 4x the recipe and cook in a large roaster pan.
