Bailey's Irish Cream Pie

Ingredients
  

Crust

  • ¼ cup butter melted
  • 2 cups Oreo cookies crushed

Filling

  • 16 ounces cream cheese softened
  • ½ cup sugar
  • ½ cup milk
  • ½ cup Irish cream liqueur
  • 2 tbsp Irish cream liqueur
  • 14 oz unflavored gelatin
  • ¼ cup warm water
  • 1 cup whipping cream whipped
  • 1 oz semi-sweet chocolate square, grated or curls for garnish

Instructions
 

Crust

  • Mix melted butter with cookie crumbs.  Pat mixture into bottom and about 1.5 inches up the side of 10-inch round springform pan.

Filling

  • Cream together cream cheese and sugar.  Slowly add milk and liqueur to cheese mixture.
  • Sprinkle gelatin on warm water; set aside for 5 minutes to soften.  Heat in microwave oven or on stove top just until gelatin dissolves.
  • Add dissolved gelatin to cream cheese mixture.  Fold whipped cream into mixture.  Pour filling into prepared springform pan.  Refrigerate for about 2 hours before unmolding.
  • If desired, decorate top of pie with grated chocolate or chocolate curls.  Pipe whipped cream on each slice before serving
