Bailey's Irish Cream Pie
Ingredients
Crust
- ¼ cup butter melted
- 2 cups Oreo cookies crushed
Filling
- 16 ounces cream cheese softened
- ½ cup sugar
- ½ cup milk
- ½ cup Irish cream liqueur
- 2 tbsp Irish cream liqueur
- 14 oz unflavored gelatin
- ¼ cup warm water
- 1 cup whipping cream whipped
- 1 oz semi-sweet chocolate square, grated or curls for garnish
Instructions
Crust
- Mix melted butter with cookie crumbs. Pat mixture into bottom and about 1.5 inches up the side of 10-inch round springform pan.
Filling
- Cream together cream cheese and sugar. Slowly add milk and liqueur to cheese mixture.
- Sprinkle gelatin on warm water; set aside for 5 minutes to soften. Heat in microwave oven or on stove top just until gelatin dissolves.
- Add dissolved gelatin to cream cheese mixture. Fold whipped cream into mixture. Pour filling into prepared springform pan. Refrigerate for about 2 hours before unmolding.
- If desired, decorate top of pie with grated chocolate or chocolate curls. Pipe whipped cream on each slice before serving
