Beef and Tortellini Soup

Prepare about 30 minutes prior to serving.

Ingredients
  

  • 1 pound ground beef
  • 28 ounces pureed tomatoes
  • 10 ½ ounces condensed French onion soup
  • 9 ounces frozen green beans
  • 9 ounces fresh cheese tortellini
  • 1 tsp basil
  • 3 ½ cups water
  • 1 zucchini chopped (about 10 ounces)

Instructions
 

  • In 5-quart Dutch oven or saucepot over high heat, cook ground beef, stirring frequently, until all pan juices evaporate and beef is well browned.  Spoon off any excess fat.
  • Add tomatoes, undiluted French onion soup, green beans, tortellini, basic, and  water.  Over high heat, heat to boiling.
  • Reduce heat to medium; cover and cook 10 minutes, stirring occasionally.
  • Add zucchini; cook uncovered 10 minutes or until zucchini and tortellini are tender.
