Beef and Tortellini Soup
Prepare about 30 minutes prior to serving.
Ingredients
- 1 pound ground beef
- 28 ounces pureed tomatoes
- 10 ½ ounces condensed French onion soup
- 9 ounces frozen green beans
- 9 ounces fresh cheese tortellini
- 1 tsp basil
- 3 ½ cups water
- 1 zucchini chopped (about 10 ounces)
Instructions
- In 5-quart Dutch oven or saucepot over high heat, cook ground beef, stirring frequently, until all pan juices evaporate and beef is well browned. Spoon off any excess fat.
- Add tomatoes, undiluted French onion soup, green beans, tortellini, basic, and water. Over high heat, heat to boiling.
- Reduce heat to medium; cover and cook 10 minutes, stirring occasionally.
- Add zucchini; cook uncovered 10 minutes or until zucchini and tortellini are tender.
