Italian Ricotta Cookies
Ingredients
Cookies
- ½ pound butter
- 2 cups sugar
- ½ tsp salt
- 1 pound ricotta cheese
- 2 eggs
- 1 tsp vanilla or anise oil
- 1 orange rind grated
- 4 ½ cups flour
- 1 tsp baking powder
- 1 tsp baking soda
Frosting
- 2 cups powdered sugar
- ¼ cup butter
- 3 tbsp milk
- ½ tsp vanilla
Instructions
Cookies
- Cream butter. Add sugar and continue creaming. Add eggs, ricotta, and vanilla; beat well.
- Sift together flour, baking powder, baking soda, and salt. Add to batter.
- Drop about a teaspoon of dough on ungreased baking sheet. Bake at 350 degrees about 10 minutes until edges are lightly browned. Cool.
Frosting
- Mix all ingredients together. Spread on cookies and top with sprinkles.
