Italian Ricotta Cookies

Ingredients 

Cookies

  • ½ pound butter
  • 2 cups sugar
  • ½ tsp salt
  • 1 pound ricotta cheese
  • 2 eggs
  • 1 tsp vanilla or anise oil
  • 1 orange rind grated
  • 4 ½ cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda

Frosting

  • 2 cups powdered sugar
  • ¼ cup butter
  • 3 tbsp milk
  • ½ tsp vanilla

Instructions

Cookies

  • Cream butter.  Add sugar and continue creaming.  Add eggs, ricotta, and vanilla; beat well.
  • Sift together flour, baking powder, baking soda, and salt.  Add to batter.
  • Drop about a teaspoon of dough on ungreased baking sheet.   Bake at 350 degrees about 10 minutes until edges are lightly browned.  Cool.

Frosting

  • Mix all ingredients together.  Spread on cookies and top with sprinkles.
