Oatmeal Scotchies
Ingredients
- 1 cup (2 sticks) margarine or butter softened
- ¾ cup granulated sugar
- ¾ cup brown sugar firmly packed
- 2 eggs
- 1 tsp vanilla
- 1 ¼ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt (optional)
- ½ tsp cinnamon
- 3 cups oats quick or old-fashioned, uncooked
- 12 oz butterscotch chips
Instructions
- Heat oven to 3750.
- Beat margarine, sugars, eggs and vanilla until creamy.
- Gradually add combined flour, baking soda, salt and cinnamon; mix well.
- Stir in remaining ingredients.
- Drop by level measuring tablespoonfuls onto ungreased cookie sheet. Bake 7 to 8 minutes for a chewy cookie, 9 to 10 minutes for a crisp cookie.
- Cool 2 minutes on cookie sheet; remove to wire rack. Cool completely. Store tightly covered.
