Refrigerator Rolls

Ingredients
  

  • 1 pkg dry yeast
  • ¼ cup water lukewarm
  • 2 ¾ cups water lukewarm
  • ¾ cup shortening melted
  • 1 ½ tsp salt
  • ½ cup sugar
  • 2 egg whites stiffly beaten
  • 9 cups flour sifted

Instructions
 

  • Dissolve yeast in 1/4 cup lukewarm water.
  • Add the 2 3/4 cups lukewarm water and melted shortening.
  • Add salt and sugar.
  • Next, add stiffly beaten egg whites, then sifted flour.
  • Cover and place in refrigerator at least overnight before using. Dough will be sticky, but don't add more flour.
  • Let rise 2 to 5 hours.
  • Bake in 400-425°F oven for 15-20 minutes.

Notes

"Brown and Serve" rolls can be made by baking in 300 degree oven for about 30 minutes, then browned when needed.  These will freeze.
