Instructions
Dissolve yeast in 1/4 cup lukewarm water.
Add the 2 3/4 cups lukewarm water and melted shortening.
Add salt and sugar.
Next, add stiffly beaten egg whites, then sifted flour.
Cover and place in refrigerator at least overnight before using. Dough will be sticky, but don't add more flour.
Let rise 2 to 5 hours.
Bake in 400-425°F oven for 15-20 minutes.
Notes
"Brown and Serve" rolls can be made by baking in 300 degree oven for about 30 minutes, then browned when needed. These will freeze.
