Rich Shortcake
Ingredients
- 2 cups flour sifted
- 4 tsp baking powder
- 1 Tbs sugar
- 1 tsp salt
- ⅓ cup shortening
- 1 egg well beaten
- ½ cup milk
Instructions
- Sift flour, baking powder, sugar and salt; cut in shortening until mixture is like coarse crumbs. Combine egg and milk; add to the sifted dry ingredients, stirring just until moistened.
- Turn out on slightly floured surface. Divide dough in half, pat out to fit 8 x 1 1/2 round pan. Brush 1 round with melted butter and top with second round. Bake at 450° for 15 to 18 minutes.
