Santa Fe Mexican Pizza
Ingredients
- ¾ cup cooked ground beef seasoned with prepared taco seasoning (one pound of ground beef yields about 2 cups of seasoned meat)
- 1 (10-inch) flour tortilla fried flat
- ½ cup prepared refried beans warmed
- ¼ cup prepared chunky picante sauce
- ¾ cup (3 ounces) American cheese grated
- 2 Tbs fresh diced tomatoes
- 2 Tbs canned diced green chilies
- 1 Tbs black olives sliced
- 1 Tbs green onions diced
Instructions
- Cook ground meat with taco seasoning. Drain if necessary; set aside.
- In large skillet sprayed with vegetable oil, fry tortilla until golden brown, making sure tortilla stays flat. (If tortilla is too large for skillet, it can be cooked on griddle sprayed with vegetable oil.)
- Remove tortilla from skillet; place on pizza pan or cookie sheet.
- Spread warm beans on top.
- Sprinkle warm cooked beef over beans; ladle picante sauce over meat.
- Sprinkle with grated cheese, tomatoes, chilies and olives.
- Preheat oven broiler. When broiler is hot, place pizza on top rack of oven and heat until cheese starts to melt, about 5 minutes.
- Remove pizza from oven; sprinkle top with green onions.
- Cut into wedges to serve.
