Sausage Skillet Corn Bread
Ingredients
- 8 oz bulk pork sausage
- 1 medium onion chopped
- ½ cup unbleached flour
- ½ cup cornmeal
- 2 tsp baking powder
- ¼ tsp salt
- ¼ tsp thyme or sage ground
- 1 Tbs honey
- 2 eggs slightly beaten
- ¾ cup milk
- ½ cup water
Instructions
- Brown sausage and onion, drain.
- In a bowl, mix flour, cornmeal, baking powder, salt and thyme.
- Stir honey, eggs, milk, water and sausage mixture.
- Pour batter into a greased 8- or 10-inch cast-iron skillet or a 2-quart casserole dish.
- Bake in a preheated 425 degree oven (400 if using a glass dish) for 20-25 minutes, until brown and set.
