Sausage Skillet Corn Bread

Ingredients 

  • 8 oz bulk pork sausage
  • 1 medium onion chopped
  • ½ cup unbleached flour
  • ½ cup cornmeal
  • 2 tsp baking powder
  • ¼ tsp salt
  • ¼ tsp thyme or sage ground
  • 1 Tbs honey
  • 2 eggs slightly beaten
  • ¾ cup milk
  • ½ cup water

Instructions

  • Brown sausage and onion, drain.
  • In a bowl, mix flour, cornmeal, baking powder, salt and thyme.
  • Stir honey, eggs, milk, water and sausage mixture.
  • Pour batter into a greased 8- or 10-inch cast-iron skillet or a 2-quart casserole dish.
  • Bake in a preheated 425 degree oven (400 if using a glass dish) for 20-25 minutes, until brown and set.
