Spinach Dip

Ingredients
  

  • 6 tbsp butter
  • 1 small onion chopped
  • 8 ounces cream cheese
  • 8 ounces sour cream
  • 1 can artichoke hearts
  • 8 ounces frozen chopped spinach
  • 3 cups pepper jack cheese shredded

Instructions
 

  • Melt butter and saute onion.
  • Mix cream cheese and sour cream together.
  • Thaw spinach and drain.  Add spinach to cream cheese mixture.
  • Drain and chop artichoke hearts.  Add onion and butter.
  • Add 2 cups of the cheese.  Spoon into baking dish.
  • Bake at 350o for 20 minutes.  Add remaining cheese and bake until melted.

Notes

3/4 pound of pepper jack cheese shreds to slightly more than 3 cups.
