Strawberry Daiquiri Pie
Ingredients
- 1 (9-inch) graham cracker crumb crust or baked pastry shell
- 8 oz cream cheese softened
- 14 oz sweetened condensed milk
- ⅔ cup frozen strawberry daiquiri mix thawed (1 can)
- 2 Tbs light rum
- red food coloring optional
- 1 cup whipping cream whipped
Instructions
- In large mixer bowl, beat cheese until fluffy.
- Gradually beat in sweetened condensed milk until smooth.
- Stir in daiquiri mix, rum and food coloring if desired. Fold in whipped cream.
- Pour into prepared crust. Chill or freeze 4 hours or until firm.
- Garnish as desired. Refrigerate or freeze leftovers.
Notes
I made this pie but had Pina Colada mix, so I used that and it was delicious. I also used 2 cups Cool Whip instead of the whipping cream and added 1 small can crushed pineapple, well drained. I guess it could be called Pina Colada Pie.
