Strawberry Shortcake Cookies
Ingredients
- ½ cup butter salted, softened to room temperature
- ½ cup Parkay margarine softened to room temperature
- 1 ¼ cups sugar
- 2 Tbs molasses
- 2 eggs
- 3 ½ cups all-purpose flour
- 1 tsp baking soda
- 1 cup dried strawberries chopped
- ⅓ cup dried cranberries (craisins)
- 1 ¼ cups white chocolate chips
Instructions
- Preheat oven to 325 degrees.
- Combine flour and baking soda, mix and set aside.
- In mixing bowl, combine room temperature butter and margarine. Beat in sugar, molasses, and eggs. Gradually beat in flour mixture.
- Stir in strawberries, cranberries and white chocolate chips.
- Place large rounded tablespoon size balls on ungreased cookie sheet. Bake about 13 minutes at 325 degrees. Cool 7 minutes before transferring from pan to cooling racks.
Notes
Dried strawberries can be hard to find. I have found them online at various sites.
You can also add dried blueberries, to make a "red, white, and blue" cookie.
