Strawberry Shortcake Cookies

Ingredients
  

  • ½ cup butter salted, softened to room temperature
  • ½ cup Parkay margarine softened to room temperature
  • 1 ¼ cups sugar
  • 2 Tbs molasses
  • 2 eggs
  • 3 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 cup dried strawberries chopped
  • cup dried cranberries (craisins)
  • 1 ¼ cups white chocolate chips

Instructions
 

  • Preheat oven to 325 degrees.
  • Combine flour and baking soda, mix and set aside.
  • In mixing bowl, combine room temperature butter and margarine. Beat in sugar, molasses, and eggs. Gradually beat in flour mixture.
  • Stir in strawberries, cranberries and white chocolate chips. 
  • Place large rounded tablespoon size balls on ungreased cookie sheet. Bake about 13 minutes at 325 degrees. Cool 7 minutes before transferring from pan to cooling racks.

Notes

Dried strawberries can be hard to find.  I have found them online at various sites.
You can also add dried blueberries, to make a "red, white, and blue" cookie.
