Strawberry Shortcake Cookies

- ½ cup butter salted, softened to room temperature
- ½ cup Parkay margarine softened to room temperature
- 1 ¼ cups sugar
- 2 Tbs molasses
- 2 eggs
- 3 ½ cups all-purpose flour
- 1 tsp baking soda
- 1 cup dried strawberries chopped
- ⅓ cup dried cranberries (craisins)
- 1 ¼ cups white chocolate chips
Preheat oven to 325 degrees.
Combine flour and baking soda, mix and set aside.
In mixing bowl, combine room temperature butter and margarine. Beat in sugar, molasses, and eggs. Gradually beat in flour mixture.
Stir in strawberries, cranberries and white chocolate chips.
Place large rounded tablespoon size balls on ungreased cookie sheet. Bake about 13 minutes at 325 degrees. Cool 7 minutes before transferring from pan to cooling racks.
Dried strawberries can be hard to find. I have found them online at various sites.
You can also add dried blueberries, to make a "red, white, and blue" cookie.
