Stromboli Sandwich

Ingredients
  

  • 1 ½ lbs ground beef
  • 1 small onion chopped
  • 1 small green pepper chopped
  • cup sliced mushrooms drained (half of a 4-ounce can)
  • 12 ounces tomato paste
  • ¼ cup water
  • ¼ cup parmesan cheese grated
  • ½ tsp dried oregano
  • ½ tsp garlic powder
  • ¼ tsp crushed rosemary
  • ¼ tsp dried sage
  • salt and pepper to taste
  • 4 (8 ounce) loaves french bread
  • 16 oz mozzarella cheese sliced

Instructions
 

  • Brown ground beef Drain. Add onion, green pepper and mushrooms. Cook 5 minutes.
  • Stir in tomato paste, water, parmesan cheese, oregano, garlic powder, rosemary and sage. Simmer 20 minutes, stirring occasionally.
  • Adjust seasoning with salt and pepper. (Filling can be made ahead and stored in refrigerator or freezer.)
  • Cut bread lengthwise leaving about 2/3 of bread below cut. Scoop out center. (Leftover bread can be used to make bread crumbs.)
  • Line shell with mozzarella. Fill with heated meat mixture. Cover with more mozzarella and replace top of bread.
  • Wrap securely in foil. Bake in preheated 400° oven 6-10 minutes.
  • Using serrated knife, cut into 2-inch slices.
