Dill Chicken Salad

Ingredients 

  • 1 pound boneless cooked chicken
  • 2 cups red seedless grapes halved
  • ½ cup slivered almonds
  • 4 green onions sliced
  • 3 stalks celery sliced
  • ½ cup mayonnaise
  • ½ cup plain Greek yogurt
  • ¼ cup heavy cream
  • 2 tablespoons chopped fresh dill (or 1/2 tbsp dill weed + 1/2 tbsp dill seed)
  • 1 tablespoon brown sugar
  • Kosher salt
  • black pepper freshly ground

Instructions

  • Put the chicken, grapes, almonds, green onions, and celery in a large bowl.
  • In another bowl, mix the mayonnaise, yogurt, heavy cream, dill, brown sugar, and some salt and pepper.
  • Pour the dressing over the salad ingredients and toss gently to combine.
  • Allow to chill several hours or overnight. Serve on a bed of lettuce or in a sandwich.

Notes

This is very good with smoked boneless chicken (purchased from Costco).
