Espinaca Dip

Ingredients 

  • 2 tbsp butter
  • 1 white onion chopped (large)
  • 8 ounces cream cheese
  • 16 ounces white American cheese (or Velveeta Queso Blanco)
  • ½ pint whipping cream
  • ¾ cup milk
  • 10 ounces Rotel Chipotle diced tomatoes drained
  • 4 ounces chopped jalapenos drained
  • 8 ounces frozen chopped spinach thawed and drained
  • 4 chicken bouillon cubes
  • 1 tsp minced garlic
  • 1 tsp onion salt

Instructions

  • In a 3-4 quart deep skillet or pot, melt butter and saute diced onions over medium heat until tender (approximately 5-10 minutes).
  • Add remaining ingredients and heat through, until everything is melted.  Serve hot.
  • If preparing in a crock pot:  Saute onions as specified above.  Move onions to the crock pot.  Add remaining ingredients and cook on low several hours - until ready to serve.  Stir occasionally.
