Macaroni and Cheese

Also called "Crackaroni and Cheese" in our household, because this stuff is so good, it must contain some illegal substance!  Ha!

Ingredients 

  • 4 cups milk
  • 2 cups heavy whipping cream - divided
  • ½ cup butter
  • 1 tsp salt
  • 16 ounces penne pasta
  • 2 cups freshly grated Parmesan cheese - divided
  • 1 tbsp dried parsley
  • paprika

Instructions

  • Let milk, cream, and butter set out for 20 minutes to come close to room temperature.
  • Preheat oven to 350 - lightly grease 13x9 baking dish
  • In a large pot, combine milk, 1 cup cream, butter and salt. Bring to a simmer over medium heat. Add uncooked pasta and cook for 12 minutes, stirring frequently. Remove from heat, add 1 cup Parmesan cheese and stir until cheese is melted.
  • Spoon pasta mixture into the baking dish and pour remaining 1 cup cream over pasta. Top with 1 cup remaining cheese. Evenly sprinkle with parsley and Paprika and bake 20 minutes or till lightly browned and bubbly.
