Identical to Madison's Cafe's house salad, in Jefferson City, MO.

- 1 head Iceberg lettuce
- ⅓ head Romaine lettuce
- 1 cup artichoke hearts
- 1 cup red onions chopped
- 1 Tbs olive oil
- ⅔ cup vegetable oil
- ⅓ cup red wine vinegar
- 1 tsp salt
- ¼ tsp black pepper
- ⅔ cup parmesan cheese
Wash lettuce, drain completely, and chill in refrigerator. Tear lettuce into pieces (do NOT cut).
Drain the artichokes, chop, and add to the bowl.
Add the onions to the bowl.
Mix together the olive oil, vegetable oil, vinegar, salt, pepper and cheese, and add to the bowl.
Toss until mixed; cover and chill for 1/2 hour before serving.
