Identical to Madison's Cafe's house salad, in Jefferson City, MO.

Ingredients 

  • 1 head Iceberg lettuce
  • head Romaine lettuce
  • 1 cup artichoke hearts
  • 1 cup red onions chopped
  • 1 Tbs olive oil
  • cup vegetable oil
  • cup red wine vinegar
  • 1 tsp salt
  • ¼ tsp black pepper
  • cup parmesan cheese

Instructions

  • Wash lettuce, drain completely, and chill in refrigerator. Tear lettuce into pieces (do NOT cut).
  • Drain the artichokes, chop, and add to the bowl.
  • Add the onions to the bowl.
  • Mix together the olive oil, vegetable oil, vinegar, salt, pepper and cheese, and add to the bowl.
  • Toss until mixed; cover and chill for 1/2 hour before serving.
