Maraschino Cherry Cake

Ingredients 

  • 2 ¼ cups sifted flour
  • 3 tsp baking powder
  • ½ tsp salt
  • 1 ⅓ cups sugar
  • ½ cup shortening
  • ½ cup chopped walnuts
  • ½ cup milk
  • ¼ cup maraschino cherry juice
  • 16 maraschino cherries cut in eighths
  • 4 unbeaten egg whites

Instructions

  • Sift together flour, baking powder, salt and sugar.
  • Add shortening, cherry juice, cherries and milk. Beat 2 minutes.
  • Fold in nuts. Pour in two round 8 inch wax paper lined cake pans. Bake in moderate oven 30 to 35 minutes, 350°.
  • Use powdered sugar icing.
