- 1 ¼ cups boiling water
- 1 cup quick cooking oats
- 8 tbsp margarine
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 eggs
- 1 ⅓ cups flour
- 1 tsp baking soda
- 1 tsp cinnamon
- ½ tsp salt
Icing
- 6 Tbs margarine softened
- ½ cup sugar
- ¼ cup evaporated milk
- 1 cup coconut
- 1 cup nuts chopped
- ½ tsp vanilla
Pour boiling water over oats and oleo. Let stand 20 minutes, then stir well.
Add sugars and eggs to oatmeal mixture and stir well.
Sift together the flour, baking soda, cinnamon and salt. Add to the mixture, and mix well.
Bake at 350° in loaf pan (9x13-inch pan) for 30 to 35 minutes. When finished baking, top with the icing and put under broiler for 5 minutes.
