Place cooking oil in medium size mixing bowl; add last five ingredients and mix well.
Peel potatoes and quarter lengthwise. Place in oil mixture and stir until all potatoes are well coated.
Place potatoes in single layer on greased cookie sheet. Bake in hot oven (approximately 425°) until potatoes are lightly browned and tender (usually 15 or 20 minutes, depending on oven).

I cover cookie sheet with aluminum foil to save clean up.
