Scrambled Eggs, Hunter Style

- 6 tbsp margarine
- 1 large potato diced (do not peel)
- ¼ cup onion diced
- ¾ cup ham diced
- 6 eggs beaten
- ⅓ cup milk
- ¾ tsp salt
- ⅛ tsp pepper
- 1 tbsp parsley
- 1 tsp basil
- ½ cup cheddar cheese grated
Melt the margarine in skillet. Saute the potato, onion, and ham until tender.
Add seasonings and milk to beaten eggs.
Pour mixture in skillet with vegetables. Stir from bottom until eggs begin to firm and brown.
Add cheddar cheese and continue stirring until cheese is melted and eggs are cooked.
