Scrambled Eggs, Hunter Style

Ingredients 

  • 6 tbsp margarine
  • 1 large potato diced (do not peel)
  • ¼ cup onion diced
  • ¾ cup ham diced
  • 6 eggs beaten
  • cup milk
  • ¾ tsp salt
  • tsp pepper
  • 1 tbsp parsley
  • 1 tsp basil
  • ½ cup cheddar cheese grated

Instructions

  • Melt the margarine in skillet. Saute the potato, onion, and ham until tender.
  • Add seasonings and milk to beaten eggs.
  • Pour mixture in skillet with vegetables. Stir from bottom until eggs begin to firm and brown.
  • Add cheddar cheese and continue stirring until cheese is melted and eggs are cooked.
