Zucchini Pita

Ingredients 

  • 2 cups zucchini shredded
  • ½ cup onion shredded
  • salt and pepper to taste
  • ¾ cup Bisquick
  • ¼ cup vegetable oil
  • ¾ cup cheddar cheese cut in chunks
  • 2 eggs
  • 1 dash oregano

Instructions

  • Mix together all ingredients.  Pour into a greased 9-inch pan and bake at 350o for 45 minutes, until top is brown and slightly crusty.

Notes

Jalapeno pepper may be added if desired.
