Madison's House Salad
Identical to Madison's Cafe's house salad, in Jefferson City, MO.
Ingredients
- 1 head Iceberg lettuce
- ⅓ head Romaine lettuce
- 1 cup artichoke hearts
- 1 cup red onions chopped
- 1 Tbs olive oil
- ⅔ cup vegetable oil
- ⅓ cup red wine vinegar
- 1 tsp salt
- ¼ tsp black pepper
- ⅔ cup parmesan cheese
Instructions
- Wash lettuce, drain completely, and chill in refrigerator. Tear lettuce into pieces (do NOT cut).
- Drain the artichokes, chop, and add to the bowl.
- Add the onions to the bowl.
- Mix together the olive oil, vegetable oil, vinegar, salt, pepper and cheese, and add to the bowl.
- Toss until mixed; cover and chill for 1/2 hour before serving.
