Oatmeal Cake

Ingredients
  

  • 1 ¼ cups boiling water
  • 1 cup quick cooking oats
  • 8 tbsp margarine
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 ⅓ cups flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp salt

Icing

  • 6 Tbs margarine softened
  • ½ cup sugar
  • ¼ cup evaporated milk
  • 1 cup coconut
  • 1 cup nuts chopped
  • ½ tsp vanilla

Instructions
 

  • Pour boiling water over oats and oleo. Let stand 20 minutes, then stir well.
  • Add sugars and eggs to oatmeal mixture and stir well.
  • Sift together the flour, baking soda, cinnamon and salt. Add to the mixture, and mix well.
  • Bake at 350° in loaf pan (9x13-inch pan) for 30 to 35 minutes. When finished baking, top with the icing and put under broiler for 5 minutes.
